Christian has written beautifully about other of his favorite regional ingredients such as the tomato, but, as all chefs know, the truffle is one of the most beguiling ingredients in the world. One cannot remain indifferent to it--people either love the taste and smell of this aromatic tuber or simply loathe it. I love truffles, cook with them whenever the opportunity presents itself, and can even become practically poetical when talking about them, but Christian takes this love to new heights. We are all fortunate that he decided to transcribe this love onto paper.
