**Guy Martin at Le Grand Vefour**Since the Cafe de Chartres opened in the Palais Royal gardens in 1784, the site of Le Grand Vefour has remained at the center of French culture. The restaurant assumed its present name in 1820 and, since its reopening in 1948, has remained a preferred meeting place for French politicians, artists, authors and gastronomes. Classified as a historical monument, the restaurant reclaimed its culinary heritage under the stewardship of Guy Martin when it received the coveted three-star rating in the 2000 Red Michelin Guide.
